what you learn - same as dubaimum said
organization needed - having everything at hand before you start, does the child need cream if so where is it is it the right one, do you need clean cloths are they close by all that kind of stuff, is there something that should not be used on the child, can the child reach the disinfecting equipment - they should not be able to!
Benifits - helps you and the child develop a relationship with one on one time if you use the time to talk and sing with them (not always possible for one on one time in large settings so any one on one time should be well utilized, ask about their day, helps develop their language, parents can be reassured you are doing your best to care for their children and respect them which in turn makes it easier to develop a positive relationship with the family.

What you learn...
Once you've changed many nappies on the one baby, you learn what's 'normal' for that baby. If you see any changes in bowel movements that might indicate a problem (food intollerance, illness etc). You can also watch for rashes which might also tell you about intolerance or illness.
Organisation needed...
Have a safe change surface, clean and ready for baby to lie on; have a clean nappy and plenty of wipes in easy reaching distance for you (but out of baby's reach); have somewhere hygeinic to dispose of the dirty nappy; have barrier or soothing cream ready in case of a rash
The benefits...
As mentioned before, you can keep an eye on the baby's general health by being familiar with their nappies!
